Redwallon Ale

  • Style: Irish Red Ale
  • 6.25% ABV
  • 19 IBU
While some prefer their heads to explode with the hoppiness of an IPA, others prefer the malt to do all the talking. Redwallon takes this to heart with a complex blend of more than six malts playing a nutty, roasty, caramel tune with a clean finish that leaves you ready for more.

Demonic Stout

  • Style: Chocolate Coffee Stout
  • 6.0% ABV
  • 55 IBU
This sinfully delectable beer provides a blending of three stout categories into one fantastic beer. It combines cocao nibs, cold brewed coffee, and lactose together with a lingering chocolate finish to create a flavor so good it will haunt your dreams. Also available in Nitro.

  • 5.2% ABV
  • 36 IBU
Brownstone - A light-bodied, toffee-like Northern English brown ale with a bitter floral note that does not linger, perfect for relaxing after a long day at work.

Code Violation

  • Style: English Pale Ale
  • 4.6% ABV
  • 28 IBU
An homage to the delays of opening due to our bathroom renovation, this pale ale provides malty notes with a strong floral hop finish.

Mari's Face

  • Style: English Pale Ale
  • 5.0% ABV
  • 25 IBU
In the Victorian era, society’s ideal beauty came in the form of skin as pale as the moon and a minimalist approach to make-up and color palette. This pale-faced delight uses 100% Maris Otter malt and 100% Cascade hops staged at the right intervals to provide a touch of nutty character with a crisp, floral finish.

Prairie Wheat

  • Style: American Wheat
  • 5.0% ABV
  • 25 IBU
A refreshing wheat beer that has been inspired by elements of the prairie, Prairie Wheat has been infused with fresh chamomile, ginger, and honey. Combined with floral notes from Cascade hops, you get the perfect summer beer to relax with.

Red Eye Rye

  • Style: Rye Ale
  • 5.5% ABV
  • 30 IBU
For the rye lovers not looking for an IPA, Red Eye provides the malt-forward flavor found in Redwallon Ale with the distinct flavors of rye.

Evil Pumpkin Patch

  • Style: Fruit/Spice Beer
  • 7.0% ABV
  • 25 IBU
Striking the balance between the heartiness of our locally-sourced roasted pumpkin and the five-spice blend of cinnamon, nutmeg, allspice, ginger, and clove that people recognize in delicious pumpkin pie, this beer is a flavorful selection without being overpowering or heavy, and arrives in time for the fall season.

Internal Propellant Actuator

  • Style: English IPA
  • 7.6% ABV
  • 45 IBU
This IPA blends an English Malt composition with American hop profile to bring a distinctly flavorful IPA that hits you with its warm embrace and then leaves you to do what you want with its memory.

Gimble's Blood

  • Style: Scottish Wee Heavy
  • 8.1% ABV
  • 30 IBU
This malt-forward, boozy beverage embodies the heart of traditional high-alcohol Scottish beers. Forget your shillings, forget your export, this beer masks the alcohol content with a smooth and sweet finish that you would swear we sacrificed a kiltsman to make it this good. Note: No Scottish people were sacrificed in the making of this beverage.

The Morning Routine

  • Style: Oatmeal Stout
  • 5.25% ABV
  • 28 IBU
Forget the bowl, this oat-infused light stout has what you need to start the day off right.

Highland Memory

  • Style: Scottish Export
  • 5.8% ABV
  • IBU
This malty beer hearkens back to historic Scottish ale creation, where beer styles were named based on price (40 shilling, 60 shilling, 80 shilling, etc) as a gauge of alcohol strength. While most US brewers brew the stronger Wee Heavy, this Scottish Export is the more casual drink with a smooth finish.

The DeePa

  • Style: Imperial IPA
  • 7.1% ABV
  • IBU
While folks love the Internal Propellant Actuator, our Magistrate of Fermentation kept hearing the resounding cry of “more hops, more hops”. This is his answer to that cry. An intense citrus burst, this will satisfy most (though not all) hopheads.

Eve's Future Favorite

  • Style: Peanut Butter Porter
  • 5.0% ABV
  • 30 IBU
When tasked with naming this peanut butter infused brown porter, we could think of no one else but the Magistrate of Fermentation's daughter, Eve, to name it after. A voracious peanut butter consumer, this beer is destined to be her favorite and anyone who enjoys peanut butter should have a glass in her name while she is still too young to drink.

Mariner's Reserve

  • Style: BA Sour Porter
  • 10.5% ABV
  • 42 IBU
This baltic porter is a smooth porter with a very distinct flavor brought on by using both lager and ale yeast. Aged in a whisky barrel and soured, this high alcohol beer is sure to small amounts.


  • Style: Irish Stout
  • 5.25% ABV
  • 38 IBU
This dry, roasty, dark stout is balanced by its thick, tan, creamy head that makes it the choice of heavy stouts that can be sessionable.

Kilts & Chauns

  • Style: Irish & Scottish Pour
  • 5.0% ABV
  • 40 IBU
First we pour Highland Memory, our Scottish Ale, halfway up the glass. Then we pour O'Wallon, our Irish Stout on Nitro, on top. The result is a delicious split beer found only in our taproom.

Vanilla Demonic Stout

  • Style: Chocolate Coffee Stout w/ Vanilla and Oak
  • 6.6% ABV
  • 30 IBU
Demonic Stout, aged with American Oak Chips and Madagascar Vanilla Beans.

Steam Jacket

  • Style: Kolsch-style ale
  • 5.5% ABV
  • 20 IBU
This Kolsch-style ale uses a combination of pilsen and wheat malts with noble hops to create a bright beer with refreshing, crisp finish.

Sun's Out, Guns Out

  • Style: Session IPA
  • 4.2% ABV
  • 63 IBU
Coming out of the hum-drum of winter, the weather is warming and it’s time to put on your aviators and sleeveless shirts and start enjoying Spring with a hop-forward IPA without the alcohol to stop you short. Intense grapefruit aroma with floral notes lead the charge clear into the tangy finish.

Bloodshot Hefe

  • Style: Blood Orange Hefeweizen
  • 5.5% ABV
  • 10 IBU
This German-style hefeweizen has been infused with blood oranges and red malts to accentuate the banana and clove flavors that traditional Weizen yeast creates during fermentation and provide a unique color to the beer.

Bloody Weiss

  • Style: Tart Wheat
  • 5.8% ABV
  • 10 IBU
The younger brother of Bloodshot Hefe, this wheat beer aged with blood & navel oranges has a distinctively tarter finish than its sibling. Some banana and clove notes blend in with the orange flavor.

Eve's Tuition

  • Style: Double Peanut Butter Porter
  • 8.3% ABV
  • 27 IBU
The successor to Eve’s Future Favorite, this robust porter is an amped up version with more alcohol and even more powdered peanut butter to satisfy the Magistrate of Fermentation’s young daughter, Eve, and her voracious appetite of constant peanut butter.

Too Broke For Adjuncts

  • Style: Robust Porter
  • 8.0% ABV
  • 28 IBU
Peanut butter, chocolate, apricots, cinnamon, vanilla beans, chili peppers, the bones of a long-dead ancient civilization. This beer has none of those things, nor any other specialty ingredient. The ingredient list is simple: malted barley, water, hops, yeast. This beer keeps it simple as a reprieve from our weirder styles.

Delicious maple-infused robust porter with toasted fenugreek seeds, cinnamon, and belgian candi syrup.

Brett No Thing

  • Style: Scottish Ale Infused w/ Brettanomyces
  • 4.8% ABV
  • 26 IBU
Sometimes, we get a bit funky. This is one of those times. This malty ale has been infused with Brettanomyces to create a unique tartness to an otherwise normal Scottish session beer.

Needs More Zen

  • Style: Vienna Lager
  • 4.0% ABV
  • 22 IBU
Crisp, dry, and malty as hell, this Vienna Lager is flavorful but still true to the lager style that leaves you ready for four or five.


  • Style: American IPA
  • 6.5% ABV
  • 46 IBU
We get a lot of ‘Where is Genoa?’, which is usually followed by ‘Genoa is in the middle of nowhere’, giving it the unpleasant nickname of ‘Genowhere’. Genowhere IPA gives those folks a firm slap in the face with a combination of Falconer’s Flight and Cascade hops, followed by a finger on the Illinois map showing our hometown.

The Nordic Imperial

  • Style: Nitro Imperial Stout
  • 10.0% ABV
  • 30 IBU
Unlike its Russian counterpart that imparts a high hop bitterness, our Nordic brewmaster has concocted an imperial stout with residual sweetness from Belgian Candy Syrup and Cane Sugar, while still having the big body flavor of a traditional imperial stout. To top it off, it is served on a Nitro stout to give it a creamy head.

Marshmallow Imperial Demonic

  • Style: Imperial Coffee Stout w/ Vanilla & Lactose
  • 10.5% ABV
  • 28 IBU
With gobs and gobs of Madagascar vanilla beans and double the lactose of the normal Imperial Demonic, this smooth and delicious beer is a bit mellow on the coffee.

Morning Imperial Demonic

  • Style: Imperial Coffee Stout w/ Maple & Fenugreek Seeds
  • 10.5% ABV
  • 28 IBU
This variant of the Imperial Demonic is aged with toasted Fenugreek seeds, Maple Syrup, Oats, Lactose, and Double the coffee of the normal Imperial Demonic.

Raspberry Imperial Demonic

  • Style: Imperial Coffee Stout w/ Raspberries
  • 10.5% ABV
  • 28 IBU
This Imperial Coffee Stout has been aged with local raspberries and increased lactose content.

Spicy Imperial Demonic

  • Style: Imperial Coffee Stout w/ Ancho & Habanero Peppers
  • 10.5% ABV
  • 28 IBU
Sometimes, we like a slow burn. A pound of Ancho Peppers and a handful of Habanero Peppers were steeped and the extract blended to give a pepper complexity to balance the coffee, and a slow burn in the finish.

In addition to great craft beer, we make quality craft sodas from scratch. Below is our list so far.

I Am Root

  • Style: Root Beer Soda
This delicious root beer is made from scratch using several roots, spices, and various sugars to create a unique flavor that hearkens back to before the extensive use of wintergreen in modern root beers.

Cherry Elixir

  • Style: Black Cherry Soda
This soda features vanilla bean accenting a strong cherry flavor with minimal tartness with only a splash of sugary sweetness, unlike its competitors.

Cademon Cream

  • Style: Vanilla Cream Soda
Using fresh Madagascar vanilla beans and a blend of beet sugar and granulated sugar, this smooth classic is a great sipper.

Kishwaukee Green

  • Style: Lemon-Lime Soda
This radioactive green soda features an infusion of real limes and lemons and a sharp pop that leaves you giggling for more.
